To make about 24 small cup muffins (paper cases) Ingredients:

8 oz of cheddar cheese, finely grated

2 cups/8 oz of almond flour

2 level teaspoons bicarbonate of soda

1 cup/3.5 oz raisins (we use the " Sun-Maid California seedless raisins " )

5 large eggs

1 level teaspoon of dried mint (this is an essential ingredient in my view)

0.5 level teaspoon of ground cinnamon Method:

Beat the eggs with the almond flour, then mix with the other ingredients until

well combined. Use a tablespoon to place the mixture into the paper cases. Bake

in a pre-heated oven Gas 6/400 degrees F/200 degrees C for about 15 mins OR

until risen and golden brown. Can be eaten hot or cold. Recipe submitted by
