Hazel, If you're not eating gluten the celiac's won't show up on the endoscopy. You have to be consuming the gluten (and destroying any healing that has taken place) to get the diagnosis. If you're feeling better by not eating the starches and sugar, is having a diagnosis so important? Will the diagnosis change anything? Just a couple of questions to think about.
