I would definitely like to get some more info on what you said about the

fruit cravings because I can tell you that my son eats fruit like it's going

out of style. He has at least 5 pieces of fruit a day. He is always asking

for it. Where can I read about this high gi/low gi thing and the

sugar/fruit cravings? Also, could this explain his screaming in the night?

I never give him any food during the night. He just eventually goes back to

sleep, or sometimes he doesn't even wake up. He just screams while he's

sleeping. Thanks to any info the anyone can give.

I am confused... you say she has been on SCD for 2 to 3 months... but you are

giving her coconut kefir? Kefir is not something that is recommended until much

further along on SCD. Here are some comments from Elaine's website:

<<From Pecan Bread support group

From Elaine:

Kefir is a yeast fermentation which produces alcohol. So the yogurt made from

Kefir grains will have a good deal of alcohol. Furthermore, upon checking, I

have found that after a 24 hour fermentation there is 5% lactose remaining in

kefir fermented milk. Kefir is a wonderful food but I cannot recommend it until

the child is well.

Seth writes:

Kefir is more potent than yoghurt, so if one cannot tolerate the yoghurt then I

would be cautious about trying kefir. Did you try straining the yoghurt? Making

your own kefir isn't as easy as yoghurt to get started, but once you get started

with it I think it can be easier.

If you're really interested in making Kefir, I suggest that you join a list

dedicated to it. The one I belong to is:

http://groups.yahoo.com/group/Kefir_Making

If you let them know that you are on the SCDT and need to remove all lactose,

then Dominic (the list owner) will help you out and you can get grains.

There seems to be a bit of confusion over the word grain. Kefir has no grains of

the wheat, barley, corn, and rice variety. The Kefir grain looks like small

cauliflower and is squooshy like rubber. It is made of a polysaccharide matrix

that the microbes make from the milk and live in/on it. The yeast are beneficial

ones. Just as there are " good " and " bad " bacteria, there are " good " and " bad "

yeast. Kefir is something I recommend to my friends who are on long antibiotic

treatments because antibiotics do not kill the yeast in Kefir - so this is one

advantage that kefir has over yoghurt.

re/ high GI low GI

Hi all , we have been SCD with our youngest daughter for 2/ 3 months.

recently she has been waking up at 4 am or 5 am instead of her usuall

8 am. She then screams, has a bottle of young coconut kefir sweetened

with honey and 20 minutes later is back to bed sleeping. I have heard

that the SCD is high GI and will affect sugar(i.e fruit ) cravings.

Could this be the case. How would I fix the situation.

thanks in advance.

Hi Patti

When i stated we are giving coconut kefir/ this is made from

fermenting the water from coconuts. it definitely has no lactose.

I am still concerned as to why she is waking up at 5 am .

thanks

Hmmmm.... okay, well... I am very unsure on the advisability of using coconut

kefir for new SCD-ers... but I'll defer to someone else because I just really

don't know. I know most of us do not use it.

I really don't know about the early waking. My daughter (age almost 10) was

going through a phase of waking up at 5:30 am for most of the summer

(considerably earlier than Mommy wants to get up)... and then suddenly, started

sleeping in till 8 am about two weeks ago. Kids just do that sometimes.

It's very frustrating... that we just sometimes don't know why, and have to make

adjustments and try to accomodate somehow. Early on, I took it as a sign that

she needed more exercize (she has CP and does not walk a lot unless we take her

out and walk with her)... and we also started keeping her up a bit later. But,

it took a month or more before it actually changed her waking routine.

In terms of SCD, when kids are new to the diet, their systems are often

detoxifying... the dealing with those toxins as the body has to process them and

get rid of them may be somewhat stimulating... or may make them a little

uncomfortable. As the digestion changes, it may change all kinds of other body

rhythms. That's just a guess on my part.

I feel for ya... sleep deprivation is wearing on parents.

Young green coconut water should never be used on DCD. That is a protocol from

the

Body Ecology Diet and it has made children ill.

Mimi will know about other cocnut kefir, it's value and when it can be

introduced.

To make SCD legal coconut kefir you need to make sure of the following points:

1)Use mature coconuts rather than young ones.

2)Use the traditional kefir grains as starter rather than the ones

made by the Body Ecology Diet. The list below will help you find the

traditional starter:

Elaine was very concerned that kefir was too powerful a product for

beginners so I would wait till the child had more gut healing before

attempting to use it. You can make coconut yogurt instead.
