Sorry I can't give the person credit who wrote it. I saved this but

haven't tried it yet:

" I peel, core and slice up a couple of apples and simmer in water

until soft. Then I throw in some blanched almond flour (but any nut

flour would work well) and let it simmer down until desired thickness.

Iallow it to cool slightly and add some yogurt (or nut yogurt/nut

milk). Adding some cinnamon is nice. You could add honey but I find

the apples make it pretty sweet "

We make one similar to the one that Elaine B posted, and we really enjoy

it--especially on cold, winter mornings!

2 cups diced apples/pears/peaches

2 cups apple cider

1 cup nut flour (approx)

dash of salt

1/2 tsp cinnamon

optional--tablespoon yogurt

Cook fruit in cider. As the fruit begins to soften reduce the heat and add the

nut flour, salt, and cinnamon. Cook on low heat until well blended and heated

thoroughly--about 2-3 minutes. The measurements for these are

approximations--add to suit your taste and desired consistency. Yogurt can be

added for those who like " creamier " taste. Nut flour amounts vary depending

upon the kind of fruit used (macintosh apples are juicier and require less flour

whereas delicious are drier and need more). Add more or less nut flour or

cider to achieve the consistency you desire. Previously cooked fruit (such as

applesauce) can be used to make this really a fast and easy breakfast. We

frequently use up leftover cooked fruitsauces this way. Top with fresh berries

when your healing progresses and allows for it.

This recipe is from Deb at scdrecipe_creators

We adapted Donna's recipe for the " Mock oatmeal " ! Although we loved it, my son

could not digest the nut flour or the apples. He also has sensory issues and

likes " smooth " textures. So this is how we changed it! Deb

Apple Cinnamon Hot Cereal aka “Yummy Stuff” - Adaptation to Donna Becker's

" Mock Oatmeal " Recipe

4 whole eggs

2 tbsp. honey

1/4 tsp. salt

2 tsp. cinnamon

whisk above ingredients together very well

Add:

1 cup almond flour processed into almond butter

2 cups applesauce

Stir well

Spread into greased 8 1/2 x 11 pan and bake at 375 for approx. 40-50 minutes.

It should be soft, but not " wet " to the touch. If it still looks real liquidy,

keep on baking!

Nutrition Facts: Cut into 15 squares - Each square- (If you use egg whites in

recipe)

Calories 72

Fat 4

Carbs 8

Protein 3

Fiber 1

Alterations:

1. For babies over one year (there is honey), or young toddlers put a square in

a bowl and microwave about 10-15 seconds. Mix up with a fork. Add almond milk

and stir until the consistency your baby will tolerate.

To one square:

2. Add 1/4 cup fruit sauce (apple or pear is a favorite here!) and microwave,

mix well with a fork before serving.

3. Add 1/4 cup fruit sauce and if you/your child is ready, top with 2 tbsp.

raisins and/or chopped nuts, microwave, mix well with a fork before serving.

4. Add 1/2 a sliced banana, 1 tbsp. nut butter, and microwave. Stir up. If

necessary add almond milk or other liquid to get desired consistency.

Thank you for the yummy recipe. Does this work well with substituting

gelatin for eggs (my son is allergic)?
