Guest guest
This batch will be edible...and will still have active probiotics in it, as long as you cooled the milk to the proper temp before adding starter. But the higher heat does somewhat damage proteins in goat milk. Next time, follow the instructions on the site, not the ones that came with the yogurt maker. Patti *Goat milk is delicate Help! I made my first batch of yogurt yesterday, using goat milk. The instruction book that came with the yogurt maker said to heat milk to 203 degrees. Now I'm reading: *Goat milk is delicate and should not be heated above 185 degrees F. Is this batch wasted? Or is it still OK? :-( Jan(Celiac - GF 2/02, SCD 6/06)
Guest guest
Dear Jan, I have done this too with goat milk, on accident. When I loose track of time and it starts to boil and goes over 180 (doesn't take much to boil the stuff). From my experience, this causes the yogurt to separate....the liquid from the protein while fermenting......I had to drip it through cheese cloth so that we could even use it. You may have to do this too. Otherwise not very easy to eat, has funny texture too, when heated too high. Better luck next time. Hope this helps, Antoinette (celiac) family of five SCD 2/06/GF since 12/04; family problems: celiac/add/adhd /autism /hyperekplexia
Guest guest
THANKS, You said >>> This batch will be edible...and will still have active probiotics in it, as long as you cooled the milk to the proper temp before adding starter.<<< The instructions that came with the book says cool to 95 degrees. This is also different than tha SCD instructions. Should it still be OK? Next time I'll follow the right instructions. Guest guest
Jan.... I don't know what starter you're using, but it should be fine. 95 is lower than the temp that the Lyosan/Yogourmet starter I use says to cool down to (for example)... but I always cool to about 95. I just got into that habit because that's what Elaine Gottschall said she personally always did.... " just to be on the safe side " . She was so careful... not wanting to kill off any of the " good guys " in the starter. Too hot would kill them off.... but a little cooler shouldn't be a problem, since your yogurt maker will soon bring it all up to proper incubation temp. Guest guest
I posted and don't think it sent so doing it again. Thanks everyone who's helped. It's in the frig now. I hope this batch isn't wasted. Will it have any nutritional value since I heated it to 205? The instructions also said for firmer to add 5 TBsp of powdered milk. I added 3. It does NOT look very firm. It's watery. Is this normal? If I strain it I don't know how much will be left. And is the water good for anything? I WON " T give up! Thanks again. Guest guest
OK..... No.... you should not have added ANY powdered milk! We can't do that on SCD! Please review the instructions on the website! Yes, goat yogurt is fairly thin and runny. Guest guest
" The instructions also said for firmer to add 5 TBsp of powdered milk. I added 3. It does NOT look very firm " You are not following the correct set of directions for making SCD Goat yogurt. Please go to this website and follow the directions found there. http://www.pecanbread.com/goatyogurt.html You should NOT add any powdered milk to SCD yogurt. Having added the powdered milk makes this batch of yogurt NOT suitable for SCD. I'm sorry to be the bearer of bad news. Please review the directions on the website. The directions that came with the yogurt maker are not appropriate for SCD. Jody mom to -7 and -9 Malabsorption/GI Issues SCD 1/
Guest guest
For goat milk yogurt, would you have to use the starter, and can you use acidophilus pills? Guest guest
, To make ANY kind of dairy yogurt... goat or cow... you need to use starter. You can't just open the acidophilus capsules and mix it into the milk. Is that what you were asking? There are other cultures in the starters that are strictly for the fermentation process.... they're the ones that do all the work of digesting the lactose. Acidophilus alone won't do it. You can, however, take acidophilus supplements... if for some reason you're not able to make or eat the yogurt. However, yogurt does seem to have more healing power than supplements alone. Guest guest
Yes, that was what I was asking. I thought I had remembered that you could do that with the cow's milk yogurt. Sorry for the confusion! :-) And thanks for the clarification. I was powerful confused! ;-) ~ > >Reply-To: pecanbread >To: <pecanbread > >Subject: Re: Re: *Goat milk is delicate >Date: Fri, 9 Jun 2006 08:22:04 -0700 > >, >To make ANY kind of dairy yogurt... goat or cow... you need to use starter. >You can't just open the acidophilus capsules and mix it into the milk.
