Looking for help packing food for a trip...

Hi all!

I'm looking for ideas for packing for a trip that we're going on in a

few months. We're traveling with a group of friends to an uninhabited

island and have to bring all our own food. They don't have much in

the way of cooking facilities - I can count on warming, but not much

cooking. There is some refridgeration space, but not much; no

refridgeration on the 12-16 hour trip there (just our cooler with

ice). One of the other kids is highly allergic to nuts, and with the

lack of medical facilities, I cannot bring any nut products, except

for walnuts.

My son has been SCD for about 2 years now. He's eating most foods

from the diet except beans. He can have limited quantities of most

fruit; no cow's milk, but can do goat's milk products.

The group will be doing scrambled eggs for breakfast (I'll be cooking

and providing the coconut oil :-). I've got a few ideas

(beef/buffulo/chicken jerky, home-canned honeyed squash/pumpkin), but

would love some other ideas. I've canned everything except for meats,

and am a bit fearful of that. I may end up canning some sloppy joes

for the trip if I can't come up with any better ideas (it's his

favorite!). He can do a bit of dried fruit (except for raisins or

apples).

I'd appreciate any ideas!
