But I have some ideas for you. Can you eat eggs? Try making the pumpkin pie filling. I think it's on pecanbread.com. Yummy. You can make it with other fruits instead of pumpkin as well. A warm baked pear half, maybe with some cinnamon is amazingly delicious. We served them to relatives instead of a birthday cake before we could have nuts. Everyone was amazed at how delicious they were. Have you tried all of Jody's suggestions on varying baked fruit? I love baked peaches and nectarines. Try making vegetable latkes. They're pancakes with eggs and cooked veggies in it. They're a bit of work, but so delicious. We use the recipe from SCD with Taste and Tradition, but leave out the bean flour since it is illegal. And we usually leave out the parsley root since they are hard to find. (I guess bean flour may have been considered legal at one time, but had to be prepared a special way. Now it's illegal.) You can find other latke recipes by doing a search. I think some have been posted on this list and the new search feature is so much better than it was before; it should be easy to find. Here's a chili recipe you might like. I make it all the time. I leave out the red pepper flakes--too hot for us. We don't use the beans and I make my own chili powder since it's a blend. I add extra garlic since there's none in my chili powder. I skip the sauteing step. The veggies get plenty soft no matter how I cook it. Recently I have been making it in the pressure cooker instead of a roaster pan. Dan's Chili from the SCD Web Library • 1 pkg of white (navy) beans (900g -- 2 lbs)[NOT FOR BEGINNERS] • Soak overnight (8-12 hours). Throw away water. Add new water to cover and simmer (bring to boil and then reduce) 2-3 hours. Drain and put in large roaster. • 2 lbs hamburger • 4 cloves garlic Fry hamburger and garlic until cooked. Drain fat and put in roaster. The following are good carbohydrates, and you need not use all of them. • 2 zucchini cut in chunks • 4 grated carrots • 5 chopped tomatoes • 3 chopped onions • 5 stalks of celery Sautee ingredients listed above with oil or butter until tender. Put into the roaster. • 1-2 cans (large) tomato juice • 2 tsp chili powder (or any spices) • 2 tsp red pepper flakes The spices can be added to your liking. Add to roaster and stir. Bake in 300 degree (F) oven for 2-3 hours. Stir every 30 minutes. You may have to add more tomato juice. Makes a large quantity and freezes well in serving size containers.
