Vito, If you are going to have three eggs, I suggest some extra Vitamin B. Elaine told me that. She also warns not to have more than three or four muffins a day. I make Pecan Muffins instead of almond ones and they are out of this world! I use the recipe in BTVC, edition 10, page 122. Carol F. I too use almond flour but can't eat too much of it. Thanks! It was probably a matter of too much too soon. When you reintroduce the muffins start gradually and let your body adjust. The almond butter may be troublesome if you have the kind that has the tough skins ground in (like little specks). So, if you are having any trouble (gas etc.) you might want to either make your own almond butter (blanched almonds blended with legal oil as necessary) or avoid the commercial almond butter for a bit. I too use almond flour but can't eat too much of > it. Pecan flour should be about the same as blanched almond flour but it depends on you and what you can tolerate. Is your almond flour blanched (skins off) or is it speckled (contains the skins)? If you find you are having the " laxative effect " when you use a lot of almond flour that's your bodies way of saying you have given it more than it is able to digest right now and it needs more healing.
