Indeed, the water in the outer container is for transfering the heat, and also for keeping it uniform throughout. I'm really not sure... but it could have become too hot in some spots and killed off the bacteria. I don't know of any way you can " test " it to find out if all the lactose has been digested and/or if there is a good count of live probiotic in it. Sorry I can't offer a cheerier prospect. I bet you'll never forget to add the water again, though! Patti Yogurmet question Hello, I made my first batch of goat yogurt last night and followed the instructions on the BTVC webpage. I forgot to put water in the yogurmet before putting the inner container inside it. It will be ready to open in a few hours but I am now wondering if the batch will not be good because the water is there to transfer the heat to the inner container. When I open it I will stick the thermometer in to check what temperature the yogurt has been at for the last 24 hrs. Has anyone used the Yogurmet and not put in the water? Is my batch no good? Maybe the water affects how the temperature is regulated by the Yogurmet. It did seem to set but I'm going to make a new batch anyway...with water this time...
