My son ate chicken!!

Hi,

Just wanted to share the good news that my son actually ate chicken

tonight. This is the kid whose only meat the last 5 weeks has been

bacon. Yes, I took Patti's suggestion of just not fixing the bacon

(well, I fixed half as much as usual and told him he could only have

it for 2 meals).

He has not eaten unbreaded chicken in about 4 years.

This is how I made the chicken - it tastes good. I hope someone else

can find it useful.

***Cut up chicken breasts into nugget sized pieces (or whatever

size/shape s/he might like). Make a batter by beating two eggs, and

adding some pressed garlic, salt, and pepper. Heat some oil (I used

safflower) in a big frying pan. I used about 1/8 inch of oil in the

pan. Dip the chicken pieces into the batter and fry in the pan.

Turn pieces over to brown on both sides. Let drain and cool on paper

towels.***
