Try a little of each. I like using Pecans in baking. Pecan butter can be substituted for pecan flour. They are the same it's just that the butter is ground longer and can have a little oil added to it to make it more spreadable. BTW: Most nut butters makes great pancakes and waffles! Carol F. You'll have to add a little oil to make pecan butter because pecans are a bit dryer than other nuts. Cashew butter is very good... nice and smooth... but do keep in mind that Elaine felt cashews were the starchiest of all the nuts, and should not be used in large amounts, especially by beginners. Next would come almond butter (if your child can tolerate almonds), maybe macadamia butter (if you can find it or afford it!), then peanut butter. If they have trouble, you can shelve the cashew butter for a later date, or use less of it next time. It will be okay.
