If you get to the white stuff, called the pith, it will be bitter so don't grate too deep. Also, the recipe calls for the zest of a lemon- what exactly is that?? Thanks. The zest if the lemon is scrapings from the skin. There is a small tool for that but a fork will do. I have not tried the recipe but usually one squeezes peeled and grated or sliced zucchini in a dish towel or paper towel to remove excess moisture before proceeding with the rest of the steps. > > > Carol F.
