Need to adjust diet -- too much fat

Jody,

My son is 8 yrs/ 2 mos., 50 inches tall and 61 pounds. He

is very hyper, non-verbal and spends most idle time scripting,

singing and stimming unless pushed to engage one-on-one. He has been

on SCD for 2+ years after 1.5 yrs on GFCF. We never did the intro.

We seem to be stuck in a holding pattern. He is always hungry and I

am concerned that his diet is not balanced and too high in fat.

(I've listed all the details below this post.)

I would appreciate your advice on how to make adjustments. I read in

one of your posts that you serve 3 times as many veggies as meat. Do

you suggest I push more veggies? Shall I add the goat yogurt? Shall

I remove nuts and raw veggies(this will be really hard)? Shall I

return to intro? Any other ideas.

The kidnutrition web site indicates he needs a total of 2280

calories per day.

I calculated a typical day's food for on fitday below:

Totals:

Cals/Fat/Carb/Prot

3866/260/159/246

Percentages:

60% fat

14% carb

26% protein

Here's a typical day's intake:

morning

4 oz. apple sauce

raw cucumber

raw apple

8 oz. burger patties (ground sirloin)

16 oz nut milk (4 oz nut milk / 12 oz water)

afternoon

36 silver dollar sized pancakes - (6 oz nut butter, 2 bananas, 4

eggs, baking soda)

4 oz pureed veggies (gr bean, brocolli)

4 cucumbers

2 apples

evening

24 oz. chicken or burgers

4 oz pureed veggies (gr bean, brocolli)

32 oz brazil nut milk (made w/ 8 oz nut milk + 24 oz water)
