Raw milk is great, if you can get it, because you will heat it in the yogurt making proces... but then you have control over how hot it gets... and for how long... so will have less potential for damage to the delicate goat milk proteins (don't heat above 185 degrees F). I find that the Meyenberg goat milk from the grocery store makes an inferior yogurt compared to the local, fresh, raw goat milk I get from a local farmer. It's just quite rare to be able to get it fresh from the goat, for most of us. Patti Is raw goats milk necessary for making the yogurt... or can I buy pasteurized from the local health food store?
