I know what you mean about the time table thing because I'm only 3 months into the diet here. Let me just say this. Just cry if you want to. Call up your sister, best friend, whoever, and tell them how this stinks. I do that sometimes, and even though my sister in law/best friend can't relate at all because she has six healthy children and plenty of money to help them even if she didn't, she's there for me. After you let loose a little, then keep going. It's hard, I know, but I also tell myself that I'm doing this for iel. I also am comforted by those who have done this diet much longer than me, and have finally gotten it down with the cooking. I'll say a little prayer for you. You're on the right track. Most of us do know that eggplant has seeds but it's not something you'd think about in eagerness to make a recipe.. You can't go by months because each person goes at a different pace. Just make egg crepes, (beaten egg in a skillet) roll in meat or cheese stuffing, sprinkle on almond flour and heaps of cheese and enjoy.
