I turned to my newest SCD cookbook, SCD WITH TASTE AND TRADITION and picked out Eggplant Parmesan with Vegetables. Yes, I vaguely remembered what the inside of an eggplant looked like. But I'd never had to think about it from SCD perspective. I just spent well over an hour trying to pick seeds out of my beautiful 1/4-inch slices of eggplant. I have finally declared the project hopeless and have thrown it all in the garbage can. No one likes to talk timetables around here, but I really wished recipes were labeled : not for those under three months, or six months, or whatever. I could just cry. Well, I am.
