Just peel, quarter lengthwise and remove the seeded part... then slice in long slices lengthwise, then into julienne strips. Sauteed or boiled for just a few minutes, they are very good... and noodley! <<I'm really nervous, as we'll be headed to a vacation where they include all the meals in the package, and I'm not sure what to do about that.>> That is going to be really tough.... very challenging. Most restaurants or kitchens add all kinds of illegal ingredients and seasonings. This will be especially difficult if everything is already prepared and offered buffet style. Can you write in again to give me a URL to see the section you refer to in your first paragraph, where you saw info on talking to a kid about gut issues and why the diet? I'd really appreciate it.
