Mandy,

Canned tomatoes products just cannot be trusted. If you want to make tomato

paste just boil down tomato juice until you get paste consistency.

We are going to start tomatoes soon and I have a question. The

Contadina brand tomato paste just has tomatoes listed on the

ingredients. Is this ok to use canned paste or am I about to embark on

a voyage of cooking 1,000 tomatoes :)??

No and no, Mandy :-)

Tomato paste is a definite " no " however allowing tomato juice to simmer

down eliminates the necessity for even 100 tomatoes and results in

great sauce or ketchup. (page 94 in BTVC) Some people use canned

tomatoes after checking with the company that nothing has been added.
