I'd suggest a nice regular or organic goat cheddar cheese.

Have you tried the cheesecake on page 130 of BTVC (and the vrust is on 132 but

uses

nuts)? It's my very favorite dairy. One more delicous item is Soignon Goat Brie

Cheese from

France. It may be at your local Whole Foods or a gourmet cheese store.
