Basically, on the mayo, it is very hard to find a mayo that does not have either illegal sweeteners, or canola oil (which Elaine preferred we avoid). Also, many other SCD-ers have found that they don't do well if they cut corners and try commercial mayo (even with no illegals listed on the label). The assumption is that perhaps some trace of illegal starch or sugar could be in there, but doesn't necessarily have to be accounted for on the label. I think there is a loophole for manufacturers that if it's less than 2% of the total ingredients, it doesn't have to be listed. At least that used to be true.... not sure it still is. Bottom line is, you are placing your health in the hands of a manufacturer, and hoping you can trust them to have been absolutely truthful. In some cases, this *may* turn out to be okay.... and what's listed on the label IS what's in the product. Depending on how ill you are, and you comprehension of how even a tiny trace of illegal *can* impact your progress, you may need to weigh that out for yourself. I've always said it's an individual choice.... you can try something (or contact the company yourself and have them verify, for you OWN knowledge, IN WRITING, that the product contains not a speck of anything else but the listed ingredients), then if you don't do well after adding this product in, please PULL IT.... and make your own. See if it makes a difference. Keep in mind that manufacturers can and do change their policies, recipes, processes, etc. without advance warning to the public.... so you have to be willing to take that risk. With all that said, homemade mayo is pretty simple to make... and is quite good. Knowing exactly what's in something, because you made it yourself, is sometimes worth the extra effort... just in the peace of mind you gain. Patti Mayonnaise Can anyone tell me why store-bought mayonnaise is " illegal " ? I can't seem to find an explanation as to why this is in the book. The recipe in the book looks to me like what it typically found in mayonnaise by reading the label...or is it a case of the label not telling the whole story of what is actually in the mayonnaise? We use it to get extra good fats into our little one who is trying to gain weight. She dips all meat into it....eggs....and anything easy to digest. I make it with all sort so different oils. Walnut is one of our favorite oils to use. Very balanced in omega 3's. It seems like we never have enough. Very bitter. I used lemon juice - should I have used vinegar instead? I also used extra virgin olive oil - are other oils better tasting in the mayo? Used maybe 1/2 tsp of honey. I use white vinegar (about1-1.5 tbsp), 2 eggs, about 1.5-2 C sunflower oil and a little legal dijon (about 1/2 tsp-3/4 tsp). When it looks good I add a little honey and salt to taste.
