I substitute 1 ripe medium sized banana for the DCCC in this recipe

with good results. Just mash the banana, stir it into the egg yolks,

then fold into the stiff egg whites and bake as directed.

Sounds yummy, and I may use it for my son that way. But it will be a while

before I can handle the banana. That's why I asked about the different kinds

of cheeses. I do pretty well with all of them. Anybody else use other

cheeses?
