Angie,

I am glad to hear that you are feeling better.

As for coconut, it is very fibrous and is not typically something to

eat early on in the diet.

As for your chicken wings, you could either cook them with salt on

them as you mentioned, or you could try cooking them in a bit of

tomato juice with honey. It won't be exactly like BBQ sauce, but it

would be different from just salt on them.

Other treats... have you made the banana pancakes? Sneaky veggie

pancakes? The ice cream (made from egg whites)? Popsiclces made from

juice? The pumpkin pie filling (from pecanbread.com) is very tasty too.

Use spices not in mixtures e.g: no steak seasoning, no apple pie

seasoning. They can be dried or fresh as in the case oh herbs.

examples: cinnamon, cloves, rosemary, oregano FRESH GARLIc (no powder)

same with onion. You can dehydrate the last two and make them into a

powder

Not easy? Dump all the stuff in a Cuisinart, eggs first and it's done

in seconds. (without the crust which is optional) it does have to be

chilled for hours to set nicely.

Hope you are not doing the Intro beyond 2-3 days. Once that is over you

have more options. The Stages are a guideline and not mandatory. You

can still go slowly even if you don't follow that guide. It was devised

to suggest which food parents report as easily digestible but Elaine

originally said to just go ahead introducing new foods slowly. We

suggest keeping a log or journal to keep track of how well new foods

are tolerated.

Glad to hear you are having some relief for the moment. I hope you can

find someone that can actually fix the problem soon.

My boys are getting sick of the first foods too. A couple of ideas:

You might try mixing applesauce and honey together and making a glaze

for the chicken wings. Today for lunch I mixed pear sauce in with the

chicken patties. The boys didn't like it, but I did :). I am on SCD

too. I am not sure on seasonings. My son could tolerate cinnamon and

ginger on GFCF. I have not reintroduced those yet here. I tried the

almond flour to make some granola-I was going for crunchy, but didn't

have much luck. I will try again sometime soon. We need some on the go

food. Also I think he had a reaction to the almond flour-hard to tell

really because he was so cranky. We did pecan flour waffles this

morning (I think this is jumping ahead a bit) and it SEEMS to be ok so

far. He was so happy to have waffles again! I also like the pecan

flour because here it is a lot cheaper that almond.

On coconut-that is another thing my son was able to tolerate on GFCF

that he is still ok with on SCD. Mind you, this kid was down to eating

rice, potatoes, and GFCF hotdogs and a couple of spices. I am excited

to have more that a handful of ingredients to work with!

There is a recipe for fruit leather that looks pretty good too I will

try soon. I hope some of these ideas are of help. Keep us posted on

your recovery!

Good to know you've got some relief for now. I had my lower back go out on me

last summer about this time. Scary! I was absolutely useless! I was terrified of

being disabled forever.... but it only lasted about two weeks and has not

recurred. I was happy to have the vicodin and muscle relaxers... no other way to

get through it.

Coconut is fairly fibrous. I would choose the peanut butter brownies over

anything with dried coconut at this point, even though some will say peanut

butter is a more advanced food. I would argue that coconut is even more

advanced. Anyway, the recipe is on www.pecanbread.com in the " recipes " section

(naturally :)).

They are quick, easy and yummy. Ingredients are just peanut butter, egg, honey

and baking soda. I can't keep my non-SCD family members to leave them alone...

have to hide them!

I like to put a strip of foil extending about one and a half inches out over the

edge of the pan to protect the edge from burning. I just leave that on for about

half the baking time, then remove it.

For other " non-boring " meal ideas, I'd peruse the rest of the pecanbread.com

recipe section. You'll find a number of easy things that kids can love.
