Guest guest Posted July 26, 2006 Report Share Posted July 26, 2006 Mandy, Well, you CAN make very thick tomato sauce, which works well in lieu of tomato paste, by boiling down legal tomato juice. My problem with this was WAY too much salt in the finished product, but lots of people are just fine with it. Last summer, I used my Omega 8002 juicer to juice 150 or so pounds of tomatoes, and then cooked that juice down for a wonderful sauce. Unfortunately, I had to throw it all out after Hurricane Katrina, and I haven't had the time or energy to do it this summer. I use a lot of fresh tomatoes, peeled, seeded, and cooked with a given dish. It's not as " saucy " as using the homemade sauce, but it tastes pretty good. And no, the Contadina doesn't work. <sigh> I tried it, in the hopes that " just tomatoes " would be legal, at least for me.
