Elaine's website says that beans should not be tried until " symptom free " .... and also says that kidney beans should not be the first beans tried. Her comment is that they should then be tried carefully. My guess is that they contain more starch than others?? I had another thought ... in case you have never soaked and cooked beans before.... Be sure to SORT them thoroughly... little tiny stones can be lurking in there. Not fun to bite down on! Then, WASH them well... by rinsing several times thoroughly (not with soap). THEN start soaking them by covering the beans with water... a couple of inches above the top of the beans. One and one half cups of dried beans expands... makes a decent sized pot of beans that will feed a family of four. Patti ? about soaking beans I want to incorporate kidney and black beans in my diet? What is the correct way to soak them? How long do you soak them? Basically what are the instructions on how to soak them?
