I made that for 's 5th birthday at the end of February, and my 9 yr old nt (non SCD) son liked it so much that he asked if he could have it for his birthday. Guest guest Posted June 7, 2006 Report Share Posted June 7, 2006 Kelli, I really like the coconut carrot cake that's on pecanbread.com. I don't think it has peanut butter or bananas. I also wanted to let you know that you can puree any fruit, then " drip " it the way we drip yogurt. Once it is thick, you can use 1/2 cup of it to replace a banana in any recipe. So, Kiki's and Bubble's cakes could be make with no bananas. To replace peanut butter, you can use raw cashew butter. I add a bit of salt (1/2 teaspoon) when I remember. I mix in the food processor and that works well. Just put in the eggs a few at a time or it might leak out. I make a frosting of cashew butter mixed with honey and some coconut oil. Don't ask me amounts because I didn't measure. Sorry. I believe someone else uses 4 teaspoons of vanilla instead of the cinnamon. I don't know if the original recipe didn't include the temperature and baking time, or if it somehow got cut off, but I bake it at 250 degrees for 1 hour and 20 minutes.--, mom to Cashew Butter Cake by Rochel Weiss, with modifications by Ellen 10 eggs 1 cup honey 18 oz. Cashew Butter 1/2 cup oil 1 1/2 teaspoon baking soda 3/4 teaspoon cinnamon The easiest way to make it is to put the cashew butter ( similar to peanut butter, much lighter though) and honey into a 9x13 " pan, put on a disposable glove, and make a paste out of them with your hands. Add oil, baking soda, and cinamon, and mix with your gloved hand. Now, you are SUPPOSED to split the eggs, beat up the egg whites, and mix the yolks into the batter, and slowly fold in the whites. Last week I was in a rush, and mixed in the eggs whole (no splitting or beating up the whites, no taking out the mixer, yeah!!) and the cake came out almost exactly the same!!
