Toasted Almond Ice Cream

Doesn't this sound heavenly? Remember the peanut butter ice cream recipe?

Well, I have been thinking about making a version of that with toasted

almonds, hazelnut milk and honey. I am assuming it would be safe to lightly

toast the almonds in the oven, grind them up into my own nut butter and then

add the hazelnut milk and honey.

I am a little apprehensive about buying nuts because I am not sure how much

you can trust the source and make sure the nuts are SCD legal (ie no starch

coating). Trader Joe's sells slivered almonds but .. should the package say

whole, raw almonds to ensure they are fresh and unaltered? Does anyone have

a rule of thumb for buying fresh, SCD legal nuts? Please share.

I don't have a Trader Joe's that I can use, but I do buy the whole

raw almonds from Costco, at a very reasonable price, I feel. The

last time I purchased I put some in my freezer as well, they were 3

pound bags for $10.99. They are the " kirkland " brand name.

And I do make my own nut butter out of those almonds. I roast for a

while in the oven (maybe 20 min. @ 275 degrees) and cool slightly

before letting my food processor whip them into butter (I suppose

this takes between 5-10 minutes time?)

I don't bother blanching them to remove skins as my son is nearing

his 2 year anniversary on this diet and seems to handle them now.

Sounds like a yummy idea for ice cream...I may have to try that next

time I make ice cream. Good luck with the almonds.
