When I make my chicken broth (not from BTVC) I use a whole chicken. I roast it first in the oven. I let it cool and then remove as much of the meat as I can and set aside. Then I put the whole chicken in a large pot with onion, carrot and celery and poultry seasoning). After about 3 hours of it cooking on low on the stove, I take all the stuff out - all the chicken parts (throw them out), the carrots, celery, onion (throw them out for intro) - and then I strain the remaining broth through a cheesecloth to remove any debris and spices. Then I cut up the carrots and put the meat back into the broth. I usually add some salt and spices. I am not sure if the spices are recommended for the intro but I used them without a problem. My initial read and my husband's was to remove skin and return parts to broth. But then there will be bones in our broth. I don't really see skin. There is flesh/meat. Do I remove the meat and put it into the broth, discarding the bones? (sorry if this sounds really stupid----excuse it to me having been a vegetarian for 18 years until a month ago.) I need a really quick response on this one, if possible.
