Discard skin and bones. You can return the meat of the chicken to the soup or

use it

elsewhere.

My posts sometimes take a while to show up. I hope this gets to you in a

hurry. When I make my chicken broth (not from BTVC) I use a whole chicken.

I roast it first in the oven. I let it cool and then remove as much of the

meat as I can and set aside. Then I put the whole chicken in a large pot

with onion, carrot and celery and poultry seasoning). After about 3 hours

of it cooking on low on the stove, I take all the stuff out - all the

chicken parts (throw them out), the carrots, celery, onion (throw them out

for intro) - and then I strain the remaining broth through a cheesecloth to

remove any debris and spices. Then I cut up the carrots and put the meat

back into the broth. I usually add some salt and spices. I am not sure if

the spices are recommended for the intro but I used them without a problem.

Please use your discretion with spices if you are in the intro phase.

? chicken soup p. 91 BTVC

I'm making the chicken soup on p. 91 BTVC for intro diet. The next to the

last sentence has

me confused:

" Remove skin from chicken parts and return to broth. "

What is being returned to the broth? My initial read and my husband's was

to remove skin

and return parts to broth. But then there will be bones in our broth. I

don't really see skin.

There is flesh/meat. Do I remove the meat and put it into the broth,

discarding the bones?

(sorry if this sounds really stupid----excuse it to me having been a

vegetarian for 18 years

until a month ago.)

I need a really quick response on this one, if possible.

Angie,

Just get all the meat off the bones and return that meat to the soup that way

you will have a hardy meaty soup.
