cooking in bulk

Hello all. My mother is coming for a 2 week visit and is ready to help

me cook until we drop. I purchased a smaller self standing freezer and

am wanting to gear up for some bulk cooking and freezing. We are on day

7 after restarting SCD (after 1 month with little progress.) This time

through has been much more successful. Yeah! In any case, I was

wondering if you all had some advice on what freezes well, longer term

freezer storage tips, and freezing portions. Even though has

only built up to a few foods, I thought we could make and freeze some

dishes that he'll be able to eat down the line as well as some staples

for cooking. Thanks!

I wish I could get up to fully stocking a freezer... does you mom want to

travel?? LOL

I do a lot of snacks that freeze well in the dehydrator... but take or leave

what you are up to... since i has numerous snack choices in his

Dynamyte to pick all the time. Again tweek for where you are we are in our 3rd

year.

Snacks

Cheese Crisps (dried cheese)

Banana Chips (dried bananas)

Pineapples (dried pineapples)

Cheese Cookies (the recipe from the book)

Peanut Butter Cookies (the recipe from the book)

Cheese Cake (no crust and made with Carrots, I know... crazy but he likes it

and no honey)

Granola Chews I've made and frozen

Chicken Cupcakes (or whatever cupcakes you want to make them to be really)

I don't think I've missed any snacks...

Meals

Soup (the staple SCD soup always is about the only thing I do make a big ol'

pot of and freeze up some)

Spag. Squash

All meats really, lamb I've cooked up and frozen, I don't know anything

I've made and frozen wasn't good except cauliflower...

Most Veggies freeze fine like I said only I've found so far is

cauliflower... and personally I'm no fan of tomatoes... but sauce itself is

fine... or

such... but that's just me personally they taste fine.

Sometimes I portion out other times I will do batches of the bulk item but

again I've never gotten it down to really cook up a full freezer except ONE

time when my freezer was defrosted by my daughter leaving the door OPEN... and

that wasn't PLANNED so it wasn't like I had a lot of time to think through

what I was doing LOL!

Someone came and helped me do some cooking last week. We steamed a

lot of veggies (cauliflower, carrot, zucchini, etc). Butternut

squash might be good to freeze, I have cooked a couple of those and

refridgerated them - it seems to make very tasty pancakes, it has a

sweetness to it without a lot of vanilla or cinnamon or fruit added.

We made tons of meatballs. I even bought some liver so I could

puree it and add it to the meatballs for extra iron. We made a

nutbutter cake (which lasted a week in the fridge). I also cooked a

turkey and some chicken thighs. We froze some fresh fruit. Hope

Leah, prepare:

Lasagna

Meat or tomato sauce

soups

muffins and loaves

soups

Mayonnaise (it will last over two weeks)

cheesecake

meat loaves

Apple and pear sauce

puddings (kugel)
