Its easy on digestion and easy to make, but note that it makes one 9 " layer, so if you want a double layer cake, make 2. And cover the baking cake with a foil cutout so it doesn't overbrown. I like the honey frosting in BTVC page 136. But don't make it more than maybe 2 hours before eating the cake, because even though it SAYS it remains spreadable for hours, it really doesn't, and depending on how humid it is, it can break down/melt. It is a nice marshmallowy textured frosting. Would you consider birthday cupcakes instead of a big cake? They are so easy for the little ones to handle. I made them for Clay's birthday and have this fancy cupcake display stand so it looked so cool. Since we don't do dairy yet, I haven't tried other frostings yet. Best wishes.
