It was a challenge sometimes finding recipes for him, as he's also a fussy eater. I found a spinach lasagna recipe that we all liked, that I'd be happy to share if you haven't already thought of something. I'm doing my final main course thinking, too. Problem is, we will have 7-9 adults eating over a period of three days, not even including the weekend. Everyone expects three different special dinners for Christmas Eve, Christmas Day and the following evening when the last two straggle in. It's that problem again with sharing the holidays with ex's families who live hours away. I've decided to save myself a lot of work and buy a HoneyBaked ham from a specialty shop, and roast a turkey breast (that's easy enough). That way all I really have to worry about is all the side dishes and desserts. Fortunately we only do desserts on holidays, because that's what seems to take the most time. I love to cook, but find that my health just won't let me spend all that time in the kitchen like I used to. I hope you enjoy a blessed holiday with your family. With hope and prayers, Heidi Heidi H.
