runny goat yogurt

My daughter's been on SCD for over a year and a half now. I've been

making 24-hour goat yogurt most of that time. Sometimes the yogurt

turns out much runnier than others. I make it in my oven, so there may

be some temperature fluctuation due to changing temperatures in the

house.

Do I need to assume that when the yogurt is more runny, that it's most

likely bad (not completely cultured)? Or do others see the same kinds

of inconsistencies between batches? It often tastes nice and tart,

even though it's not as congealed.
