Guest guest
We have had to take a couple of steps back on SCD which are my fault, really. I think I introduced too much too soon to my son because I felt sorry for him. I know, a no no. I tried out the nut flour waffles because he missed them so much but boy did we all pay for it. He cried, hit his brother-he is usually not physical at all. Everything was a disaster to him. So this morning I was at a loss for breakfast. He ate his eggs but was not happy about it and was still hungry. I had to take a step back on the fruit too, just to be sure so I have pulled bananas back out. So I had pears to work with. I substituted pears in place of squash since we haven't tried squash yet, in the sneaky veggie pancakes. My son took one bite and said 'These taste just like french toast!!' I thought they did too. He was happy and so was I. I must admit they were a little hard to flip, maybe it is easier with the squash. The texture might could be improved some with the addition of nut butter but we are not quite there yet. The carb cravings have subsided for him though. He isn't asking to be put on an 'all bread' diet anymore. So I am going to take it easy today and try carrots tomorrow. Hopefully he can tolerate it. He was previously off of all fruits and veggies, so pears are a start. Mandy
