However, just doing a little reading lets you see how much our environment has changed over the last several decades... One must remember that when Elaine started this with her daughter, the quality of the food they ate was much different than the mass produced 'foodstuffs' of today. My MIL remembers buying fresh produce from the traveling grocer's carts when she was a little girl growing up in West Philly! Those days are gone, for sure. Now, having said that, I believe wholeheartedly that you are only as good as what goes into you - and if you have someone damaged physically, then it would make sense not to give that person poison on top of compromised food quality. We use organic stuff for Glenn (and ourselves when we can afford it, lol). And some people do really well on " just scd " ; others like our family need a bit more help from supplements/enzymes and different dietary options within the 'scd umbrella'. No way to know until you start ;-) But since Elaine was writing about gut health and how/why one should eat scd-style; the legality of being organic or not really isn't in that equation. Better to start scd as you can, and improve as you go, right? It is not a guilt thing, IMO - everyone needs to decide what they can and cannot do with the resources available to them.
