Is it something that can be added in right away once the intro diet is over? I'd also like to understand why butter is permitted. It is no longer flui milk, but do they add a culture to it to break down the proteins? Butter is allowed because it is almost entirely made up of the butter fat from the milk. There is a trace of milk protein, which would be bothersome to those who are extremely sensitive.... in which case, clarified butter (aka ghee) is often tolerated.
