Welcome Dora!

Blanch your almonds first. Soak briefly in boiling watter then in cold water so

the skins will

pop easily. Where are you located?

www.digestivewellness.com has a variety of nut flours... I think ranging from

$2-$10 per pound.

I think Dora wants less expensive product but good quality. The purer almond

flour has

become very expensive. Nut prices have soared lately. In Canadian dollars,

Pecans are

from $11-$16 a pound, almonds $6.99 all the way up to $9.00.

The last blanched almond flour cost me $174.44 for 25 lbs. I think I will go to

Trader Joes and see if there is any there....

I had been using Pecans from Costco and they did not sit well. I found they are

only

harvested once a year and treated with nitrogen and some other chemical. I don't

know

what the story is with their almonds but I have found another local source that

has long

been known for decent prices and good quality and had no adverse reaction. Whole

Foods

had wholesome nuts but the prices are riidiculous. I did not tolerate almond

flour I

ordered from a local SCD-er but do fine with the one from my other source. The

stuff goes

rancid if it is not refrigerated or frozen promptly.

Hello there, April,

It's a cinch to make your own pecan flour as you don't have to blanch or remove

skins.

My Midas Gold Pecan Waffles and the basic muffin recipe in BTVC are absolutely

outstanding with pecan flour ground in the Cuisinart.

I find pecan flour easier to digest but if you are ambitious, blanch the almonds

to remove

the skins and just process it with the metal blade.

Just wondering where everyone stores their almond flour? Do you

refrigerate it? Also, the recipes with peanut butter...can almond butter

be used as a substitute?

Lastly, do you find yourself eating a lot of cheese. I'm craving it and

it adds to much to my meals.

Hi!Has anyone tried vacuum sealing the almond flour in 1/2 gallon mason jars?Does it help the flour to last longer? Do you still need to refridge/freeze it?Thanks.Regards .... Pat Queensbury NY

I vacuum seal my flour with a FoodSaver in plastic bags, and throw them in the

freezer. It keeps them nice and fresh!

Almond flour is pretty advanced. I've been on the diet 2 years and only enjoy

nut flours/butters occasionally. 2 1/2 weeks might be a bit early to start.
