I am not sure of a source for raw in my area. Also, do the legal cheeses have to be " raw " ?>> Either milk is fine. If you have access to starting with fresh, raw milk then you'll probably be happier with the result. You basically pasteurize it in the yogurt making process anyway. I've always used pasteurized and don't forget if it seems thin and runny it will be thicker and creamy is you 'drip " it through a hanky, cheesecloth or a paper coffee filter. > > Carol F.
