Either milk is fine. If you have access to starting with fresh, raw milk then

you'll probably be happier with the result. You basically pasteurize it in the

yogurt making process anyway.

The cheeses do not have to be " raw " .

Pasteurized is just fine. Use a thermometer. Bring it to 180F ad hold

it there a minute or two. I've always used pasteurized and don't forget

if it seems thin and runny it will be thicker and creamy is you 'drip "

it through a hanky, cheesecloth or a paper coffee filter.
