I made coconut milk twice recently. I had the best success when I

first ran the shredded coconut through the food processor (dry) for a

minute or two. I found this step to be necessary even though I was

using very finely shredded coconut. I ran the whole bag of coconut

in the food processor, which was more coconut than I needed for the

coconut recipe. (But that way, the next time I want to make coconut

milk, I don't have to get my food processor dirty).

Then I made the coconut milk recipe in my blender, using the

pecanbread website recipe.

I strained the coconut milk afterwards using a regular wire

strainer. (Note: I tried to use a paper coffee filter and it did

NOT work).

tried the recipe using dessicated macaroon coconut last year and it

was absolutely nothing like canned coconut milk (with or without

forbidden gum additives). Then I tried it again last week with wide

shred unsweetened dried coconut, just about killed my blender and

still got a very pathetic coconut milk. I am thinking that the

secret to commercial coconut milk must be that they totally puree the

coconut, and that I need a Vitamix to do that. Anyone have

experience with this?
