What I do is culture the butter first, with SCD legal culture for 24 hours, to make the butter " cultured " then follow the directions. Very easy to make, hope you enjoy! Summer " Jody G. Butter is not completely casein free, but you can buy ghee which is clarified butter and is casein free. You can also find directions online for how to turn butter into ghee.
