Guest guest Posted June 5, 2006 Report Share Posted June 5, 2006 Hi, I'm the mom of two boys, 2.75 ASD, and 1.4 NT but with gastro problems. I've had gastro problems my whole life and tested positive with enterloab for celiac. We are just in the beginning stages of the diet. I'm testing recipes and making sure I know enough to do it properly before I dive in. We have been GFCF since diagnosis, six months ago. (older ASD son)had severe diarrhea for about a year before we started GFCF. It is mostly gone now, but not as good as it was in the beginning (occasional bad days). (NT) has been severely constipated since he was six months old and has been a very poor sleeper. In my recipe experimentation, my younger son has eaten a lot of SCD foods in the last three days. The first day he had bad diarrhea. I thought it was because I gave him almond flour in things and maybe I should not have done so yet. But, the next two days he has had great bowel movements and no screaming with them--this is a miracle as far as I'm concerned! He has also only had one minor wakeup each night-- another miracle. I can't allow myself to let him be GFCF alone anymore because obviously this way of eating helps him so much. My ASD son is not showing much change yet because he's getting many illegal foods still--mostly " treats " during his ABA therapy. He's on Nystatin and probiotics, and they have helped him, though. We are certainly not compliant yet because I'm just not fully prepared yet, but now I really feel the need to speed up implementation of the diet. We will all be on the diet eventually (even Dad, though he shows no problems with foods). So, here are my questions... I can't get my kids to eat many veggies (or soup), but I have lots of success with vegetable pancakes (carrots or squash, eggs, cinnamon, a little honey, sometimes almond flour). My older son loves chicken salad sandwiches, but he likes them on crackers, so I'm having a bit of problem knowing what to put it on. Yogurt--my ASD son and I both have been tested for casein sensitivity and are both positive. I am really excited as the possibility of introducing yogurt and eventually cheese into our diets at some point. I have tried coconut milk yogurt but it came out quite runny (but tasty). I have purchased goat's milk but I know I don't like the taste and I'm not sure if we would tolerate it as yogurt or even like it. I have seen beautiful pictures of thick nut yogurt but I'm not sure how to make that happen. I'd also love some ideas for snacks for my little picky eaters. The Process of Making Yogurt Changes the Casein From Elaine Gottschall: " When we make yogurt and the pH falls to about 4.5 rather than 7.1-2 (as in fluid milk), the proteins are denatured which means that because of the acidity, the proteins lose their 3 dimensional structure (sterochemistry) which would be the reason allergists worry about casein. In yogurt and in the natural cheeses, the casein is denatured into a two-dimensional structure which would be less likely to cause allergic reactions " . Welcome to healing! I may have good news for you. Elaine claimed that in a 24 hour batch of SCD yogurt that the casein and other proteins in the milk are rendered harmless and for most do not cause an allergy reaction. Please go read all yogurt making stuff in " goat yogurt " on Pecan Bread Web Site: We came casein free but thanks to this, have been able to tolerate the goat yogurt, and even the cow yogurt. It is a wonderful food for causing " die off " and adding those much needed probiotics that take up space in the intestines, and crowd the " bad guys " out! Much better than powder SCD probiotics by far. When making any kind of yogurt make sure that your starter is SCD compliant, and has no illegals in it, or Bifidus strains. Be prepared for " Die Off " ....this is not a food intolerance reaction. We can help you here if you guys start reacting to your yogurts (regardless of what kind you make).
