I decided to post to the group because I thought others might like it, especially now that school is back in session so we're all a lot busier. These are quick to prepare (less than 20 min. start to finish) but addictive, so beware (I think they taste like fudge but better for you). I have a cookbook program that calculates the nutritional analysis of each recipe I plug into it, so I've included that info. If someone wants to know what to get you for Christmas, I highly recommend this program. It takes the guesswork out of the daily nutrients that you feed your family -- especially the one(s) with CF. It's a CD-Rom called MasterCook Suite (by Sierra). Mine is the '97 edition; they probably have an updated version. Kim No Bake Cookies 7 tbs. butter (not margarine) 2 c. sugar 1/2 c. unsweetened cocoa 1/2 c. 1% milk 3 c. oats (not instant) 3 tbs. flax seeds 1/3 c. chopped walnuts 1 tsp. vanilla Place butter, sugar, cocoa, and milk in a heavy saucepan over medium high heat; bring to a full boil. Stir constantly at least three full minutes, scraping sides of pan. Turn off heat. Immediately add oats, flax seeds and walnuts, beating vigorously with a wooden spoon. Add vanilla and beat again at least one full minute. Quickly drop by spoonsful onto waxed paper or aluminum foil lightly sprayed with cooking spray. Let stand until cool and firm to touch. Stores well and freezes well in airtight container. Recipe is easily halved. Note: You can stir in 1/3 c. peanut butter and 1/3 c. shredded coconut for more calories, carbs, fat, and protein, etc. Nutritional info will change depending on the brand/type peanut butter used. Values below are for cookies made without peanut butter and coconut. Recipe makes 30 cookies.
