I love to cook, and used to be a bit more gormet than I am now. We've gone pretty simple since starting scd. We do a lot of burgers, baked chicken, steamed vegies, ect. now. I think that you'll find that a lot of help will come simply from switching to pealed, cooked fruits rather than raw. You can try doing some simple bulk cooking like making a couple of roast, slicing them, and freezing them in their juices to keep them moist when thawing and reheating. I also do a fajita marinade with a huge amount of chicken. Then, I grill it all, and freeze it. Stuff that like is good for things like the days that we're on a field trip, at our co-op, ect. It sounds like you're family is on the right track. You'll just have to give up the grains, and cook the fruit. I hope it goes well. Prayers your way.
