For one thing, some of the tests commonly undertaken are not always conclusive. (I had an inconclusive ERCP and CT scan in 1988. I got my definite diagnosis only in May this year, by which time there were definite cacifications and atrophy to see. I have had attacks since childhood.) An experienced gastroenterologist or, of course, a pancreatologist, will often be able to recognise CP from a range of symptoms but it has to be understood that different conditions can produce similar symptoms. Secondly, certain tests are avoided, if possible, by some docs. The ERCP, for example, can provoke pancreatic pain. I remember having a very bad couple of days following my 1988 ERCP. It's just possible, depending on how you are, that your doc does not want to undertake this test yet. You don't say what tests you've had? You probably wish to assume that you do have CP and follow the low fat diet. Do you need pain- killers? If so, you should discuss this with your specialist.
