My brother is not a very healthy eater but he requested the recipe after I made him try them. I've done the cashew " cheeze " version, a no nut version, a pesto version and my brother tried out an onion/green pepper one. It's very versatile. The only problem is that they disappear very quickly! Misty, Kale chips are super easy to make yourself! Get kale. With a pair of kitchen shears or a sharp knife, cut the thick stems out of the leaves of kale. Tear them into slightly larger than chip size pieces. Toss lightly to coat with a small amount of olive oil. Lay the pieces out on a sheet of parchment on a cookie sheet (actually, I use a couple of those big " holey " pizza pans from pre-SCD days!) and bake in the oven at 350F until they are dried and crispy. (In my oven, this is 15-18 minutes) Remove from oven and sprinkle lightly with salt. Allow to cool. There's only one drawback: they vanish, way too fast! For the cashew " cheeze " version I do this: 2 Bunches of Kale 1 1/2 Cups of Cashews (I use soaked) 3 to 4 Cups of Red Bell Pepper 1/8-1/4 Cups of Lemon Juice (you can also add as much lemon juice the mixture until it tastes like a cheese) salt to taste Just process everything and then mix it up with torn pieces of the kale and dehydrate overnight. When you dehydrate them the taste doesn't change like it does in cooking and you don't kill as many of the enzymes. I got that recipe (adapted slightly) from goneraw. It's also nice because it doesn't use oil and so your fingers don't get all oily when eating them Lemon, cumin, garlic, eh? That sounds pretty good! I may have to try it! If you're looking at a recipe that calls for nutritional yeast just leave it out and add a little extra salt.
