Guest guest Posted January 28, 2010 Report Share Posted January 28, 2010 I think I've gotten this down to an art . . . make a lot of chicken soup and did so pre scd when anyone got a cold/flu.I buy a whole chicken, organic, and have the butcher cut it up into eigths, cutting through the bones, add the chicken to large pot with water and crushed garlic, cook on low to medium heat for several hours, once chicken has cooked and broth is nice yellow I remove chicken pieces and allow to cool, remove meat and discard skins and bones. Strain broth to get rid of any little bits of skin, etcthen put chicken meat back in the broth, add finely sliced onion, large chunks of carrot, sprigs of parsely, salt, and I squeeze one small orone medium size lemon in for the juice.
