I've always wanted one for squash chips and that is the first thing I tried it for--it saved so much time and getting them uniform made such a difference in the baking--they were all done at once, instead of some done, some not done, and some burnt. It works better if you peel the squash first. Finally tried it on a roast today. Works great for that also. But, we can't figure out how to get the blade off for cleaning.
