I just butter it good and don't put the batter to high so that it goes over the top, then I do loosen it with a knife before I take it out. They are really good. I bought the silicon things but they had an odor when I used them. I think it was Mara that said you can tell if it's real silicon by bending the silicon and if it stays red it's real and if it turns whitish it not. Mine wasn't so I was cooking chemicals into the quiches. Plus, I figure in 10 years or so, we're going to find out the reason that it is terrible for our health. So I more or less stopped using it - though I guess I would again with parchment paper between the food and the silicon. But I haven't used it lately.
