Suzy Carrollton, TX Dr. Veninga Open RNY 3/7/02 286/166/140 Chocolate-Coconut Protein Bars: 1 square unsweetened baker's chocolate 2 TBSP butter 2 TBSP heavy cream 3 pkts Splenda 1 Cup Chocolate Stack (or your fave chocolate whey protein powder) 1 cup chopped nuts 1/2 cup unsweetened coconut 2 TBSP DaVinci's sugar free syrup (any that you like) Melt choc and butter in microwave 1 min; stir until completely melted. Add Splenda and heavy cream and stir till mixed. Add protein powder, nuts, coconut and stir completely, add syrup and mix thoroughly (you may have to knead with your hands at this point, as mixture will be very stiff). Line a bread loaf pan with plastic wrap and press in mixture firmly and evenly. Chill till firm. Cut into 6 to 9 bars according to preference. Kathy's Peanut Butter Protein Bars: (found on page 444) 1/4 cup butter (no substitutions) 1/2 cup natural peanut butter, chunky 1 and 3/4 cups protein powder, vanilla or chocolate (Chocolate Whey Stack...of course!) 4 onuces of cream cheese, softened 1 TBSP vanilla 2 TBSP of Splenda(12 packs or use more to taste) 1/2 cup chopped peanuts ~Melt the butter in the microwave and add the PB and softened cream cheese to it. Mix together with a fork in a bowl. Then add the protein powder, vanilla, Spenda, and chopped peanuts; stir well, expect it to be very crumbly. ~Taste to see if sweet enough...if not add more Splenda ~Press mixture firmly into 8X8 pan. Slice into 12 pieces and put whole pan in the freezer. Remove when the bars are firm (I made this a whole lot easier on myself by simply using a 12 cup muffin pan, and pressing each one individually). ~To store, package each bar into individual zipper lock bags in the freezer. ~Nutritional info for each bar...approx 9 carbs and 1 gram of fiber, for a total of 8 net carbs and 31 grams of protein each (which is probably usable protein for us WLS people cause it is made with protein shake powder!!!) If you guys want to get the book that this comes from, buy " 500 Low-Carb Recipes " by author Dana Carpender. It is a good deal..I think it is about 15 bucks. Protein Fudge If you want this to taste like REAL FUDGE put in 1/2 cup butter instead of 1/4 cup, 1/2 cup of chopped walnuts in place of the peanuts, and 16 packs of Splenda instead of 12. It is truly amazing tasting...(make sure to use Chocolate protein powder though). For slightly better fudge like consistancy once set in freezer, remove from freezer and put in fridge for about 90 minutes or so prior to eating).
