Sadly, I don't think so. I visited Grainassance a couple of years ago, and

haven't checked since then, but at that time there were traces of gluten, on

a par maybe with Rice Dream. The president of the company did not know what

was in the koji since it was purchased from Japan.

As an aside, I personally believe that it is the aspergillus strain (in the

koji)even more than the barley it is cultured on, that causes problems. I

believe that this is the same kind of aspergillus used to break down the

sugars for corn syrup (which my kids react to) and perhaps even in

chocolate(which I believe my kids react to.)

In any case, my son does react to Amazake, and craves it. Not a good sign.

He has been gfcf for 5 years and is now like a litmus test for gluten.
