I used a banana bread recipe, non GFCF but I converted, but you can use anything, pumpkin, raisin, cinnamon, whatever. Bake the bread in a loaf pan as you normally would. when it is done, let it cool, then slice longways from the side in half (so that you have a top and bottom half), then slice into slices like a normal loaf of bread. Now you have half slice pieces. When I converted my banana bread recipe, it didn't raise well, so these half slices were rectangular, like a biscotti. Next, spread the rectangular half slices in a single layer on a baking sheet. Bake at 350 degrees until they've dried out, careful not to burn!
