Homemade Sorbet 1 can frozen juice concentrate (flavor of your choice) 1 1/2 cups very hot water 1 tsp xanthan gum 1 Tbsp sugar Put juice concentrate in blender. Put water in microwave on high for 2 minutes (this gets it to boiling in my microwave). Mix xanthan gum and sugar together. When the water is done, pour the xanthan gum/sugar in and stir till it becomes thicker. Then pour mixture into the blender. Blend it up with the juice and pour it into a container(s) for the freezer. >>>This is from Nutrition Action Healthletter July/August 2001: Homemade Sorbet 4 cups of your favorite berries or melon chunks (frozen) 1/2 cup orange juice Combine the frozen fruit with the orange juice in a blender or food processor until very smooth.
